So as I am settling into this new 2x6 I noticed today that the drip tray under the hood vent was condensating on the under side and dripping into the flue pan. I should note there is no preheater in this hood. I fabricated the hood and the drip tray only has one inch of rise from one end to the other. It also has a slight sag as it is made out of aluminim flashing and isnt the most stout. If I increase the pitch of the drip tray would that help keep any under side condensation from dripping until it hits the drip channel on the back side of the hood?

it would have to help even a little more slope will extend the run be fore gravity wins. can you take the sagging run back down very easy? because you could roll a rib into the flashing or bend an extra angle into it, either one will stiffen it

Ok so you have dripping from the steam stack drip tray. What would you say is the amount of condensate that is forming and dripping back into the flue pan? Lets say you have a 1/2 gallon that drips back in. Would you be better off without the hood in exchange for this condensate not falling back in? Now maybe your drip tray under your steam stack is not designed properly. I don't have one on my rig so I don't know if I have a problem. Lets leave the hood alone because it sounds like its working. Now the only way you will get condensation is if the try is colder than the hot water vapor/steam. Could your flue stack be restrictive and to short allowing cold air to come back down? Could a drain be added like commercial units have?
Without a preheater there could be some condensing at startup but everything should get up to temp and dripping should slow considerably after rig is up to temp
