So on my 2x6 raised flue I have a 2x2 strup pan with 4 channels. The foam in that pan is usually only on the last 2 channels next to the side I am drawing off and is usually a couple inches tall. Is this normal or am I heavy on foaming?

Sounds ok to me. Just watch that it is not all foam or you will scorch the pan.

Right on there. I usually draw off pretty slow to keep the pan from droping level too fast

There is a difference between foam and real thick boiling bubbles. If your over density and things are getting sketchy defoamer will help a little so check your density. Bubbles are a product of surface tension and foam will react quickly to defoamer but big shinny bubbles that are from over density sugar wont.
