How much sap to fill pans

Looking for a quick answer on how much sap it'll take to fill my 2x5 pans. Back pan is raised flue just under 4' long. Kinda panicking with warm spell, want to boil it down a smidge to kill bacteria but don't feel I have enough to really go to town with it.

2'x5'x2" = 12.5 US gallons

On my 2x6 raised flue it took just under 30 gallons to get one inch in both the flue pan and syrup pan. Hope that helps.

Is that the same for 1.5% or 4.0% because I have an RO and was planning on concentrating up to 12%

For me, on our Lapierre 2x5 raised flue, operating level is about 18.5 gallons. Just before shut down I "flood it" to about 21 gallons total, and it steams back down to about 18.5, at which point its ready to fire up again next boil. Or to drain if an extended freeze is coming. ( If I drain it after its cooled its about 18.5 gallons). Your mileage may vary! I'd just recommend that at first if you're not used to how it boils, put a bit more depth, have some defoamer ready, and a 5 gallon "oh no!" bucket of sap standing by...lol take care, mark

Got her fired up and blew right through the 50 gallons of sap I had. This thing rips compared to my flat pan set up, also eats wood like no tomorrow. Still using pallets this year as I didn't get enough wood processed to run this for the season. Log splitter is on the short list for the summer.
