How long Can i store concentrate . Will it go bad sooner than raw sap ?

i boil anything i concentrate within 3 hrs if its 40`s out , anything warmer than that i boil it as it comes out of the RO. processing sap thru the RO increases the temp which will allow bacteria to breed quicker.

Yes, it will ferment faster than sap. Typically you want to boil within a few hours unless you have a bulk tank where you can chill it.
