Collected about 200 gallons in the past few days and just started to boil. The sap did have a slightly off smell. As soon as it started to boil, the steam immediately smells kind of yeasty or like sourdough (not sweet like it does as it concentrates down) but The sap is only slightly cloudy. Temps did reach about 57 two days ago. I took some inside and concentrated it down as much as I could. It still had a slight yeast smell but didn't taste half bad. My gut tells me to dump it. Looking for some feedback.

I'd say dump it, it's not worth the risks IMO. Been there and it does suck
