View Full Version : Draw Off Spout Back of Syrup Pan

Hey Folks,
The evaporator I ordered has the draw off nozzle on the back of the syrup pan, ie from the flue pan goes to a float in the front of the arch, goes through 3 channels back towards the flue pan/ draw off spout. This is different from any of the pictures I have seen of the model and am just wondering if there are any negatives associated with this. I know cross flow pans have this option so don't imagine its too big of a deal. It was supposed to arrive in September but "fell of a truck" and got damaged so only arrived in early January. Am dealing with another problem with that may require replacement so making sure this isn't something that should also be fixed, just worried they used factory seconds to piece it together in a rush to get it out.

Sounds right, that is how a lot of pan set ups work.

Actually when you draw off at the back of the pan it's easier to keep a decent draw. When the draw is at the front, part of the draw channel is on top of some rail and this blocks heat from getting to that part.
Many manufacturers are now offering reversible flow while drawing off from the rear because it's better. That pan is hotter there.

My draw off is at the rear of the pan as well. I don't think that I would want one at the front of the pan.

Without knowing more about the size rig and the pan size and configuration its hard to tell. But personally I think the draw off should be near the back of the front pant. Generally hotter fire at that point in the arch. But I am making some assumptions. Not a good time to be sending pans back again. Hope this comes out OK for you. Pictures can help us help you too!

I changed mine to draw off the center finish pan. My draw off wasn't responding well with high concentrate making syrup right out of the flue pan.
