View Full Version : Soot on the bottom of flat pans.

I just bought a new CDL 2 x 4 flat pan classic evaporator. My question is, 1 has anybody tried putting soap on the bottom of the pan before a boil? If so, does it work? And my second question is, whats the best way to remove the soot from the bottom of the pan? Oven cleaner, vinegar, just keep brushing until its off? I have heard that if you use water, it mix's with the soot to create an acid that is not good for the SS. Any ideas would be appreciated. Thanks.

I put a nice thick coat of liquid soap before I boil and let dry then after I finish boiling down I simply scrape the soot off with a hard plastic putty knife and rinse it with water it works for me

Oven cleaner does a great job. Let it sit on it for a few hrs.

plastic scrapper and a pressure washer works good.
