I want to premake as many confections as I can for maple weekend. Can they be frozen, and if so, is there a good way to thaw them to avoid condensation and spots/softening/etc? Can they be packaged in bags and ready to go, or stored in boxes and packaged the week of maple weekend?

Below is what I'm going to make for maple weekend and what I'd like to freeze.

Maple Cream-Already do it...non-issue
Maple Candy-Afraid of spotting from condensation.
Maple Popcorn-Afraid of popcorn getting soft during the thaw
Maple Nuts-Assuming it should be fine.

Josh try freezing a couple of pieces of candy and see what happens when you thaw them out. I wouldn't try to freeze the popcorn and nuts. We have made nuts early before and store them in baking pans with loose fitting tin foil covering them. They store well that way but we don't let them sit for more than a couple of weeks. We don't bag them up until just before Maple Weekend.

Hey Josh you should be able to freeze the candy in an air tight container. When you bring it out spread the pieces out to let them breath. You can also blow a fan on them to avoid condensation. I think Wiam freezes his packaged candy, but I haven’t done it.
As far as popcorn and nuts I’m not sure. Sorry about that.

I use ziploc containers to freeze candy. Then I do as Moser suggests and let them breath before packaging them. I have tried freezing packaged candy but it has not worked out quite as well.

Most of our candy gets frozen. Some in small ziplocks of 3 small leaves to larger plastic bags closed up tight. Only time we really see condensation is when the bags sit in direct sun at farmers market.

Thanks guys. Appreciate the input. Once I get some syrup made up, I'll make up some candy and freeze it.

What do you think about tempering the transition by putting it in the fridge first and letting it thaw out there? Will I get condensation going from the fridge to room temp?
