is last run syrup supposed to taste burnt i made 3 gallons and the last of it tastes burnt i followed the hydrometer readings but it tastes odd to me

Sounds more like buddy or off flavored sap. If it was burnt, you should know when you burn it.

it could have been buddy but i did check the branches before i boiled it and there were no signs of buds

You can make buddy syrup even though the buds look like they are closed.

Sounds the same as my late season runs. Syrup was dark, smelled kind of burnt and tasted off. The sap all tasted and looked fine. The buds on my trees were all tight for atleast a week after I finished up. Someone told me that it was from a process in the trees called "metabolisis". I sold all of mine as grade B for a $1.75lb.

The last 10 -12 gallons we made week of April 11, was all off flavor but the color of the syrup was great. That went for bulk.

yeah i thoughtit was that i left it in the pan for a little to long but the hydrometer said it was perfect ussaully i test by smell and look but thats just me 80% of the time it is correct
