So far we have had 2 boils, yielding 10 gallons from about 350 gallons of sap. This is our 5th year. Last year we didnt get much-but this year is off to a great start. Missouri winters are very unpredictable-we may get warm weather from Texas for a few days and the next days could bring a Canadian air mass; but typically not much snow. This typically means mud in the sugar bush for a while and our open buckets might get rain in them or we could have big round discs of ice! Over the past few years we have met syrupmakers in various parts of Missouri. They are mostly in the hill country near the Missouri or Mississippi rivers, or in the eastern Ozark hills. The southernmost producers tap on NewYears day! Some have quite sophisticated facilities with RO and well-instrumented sap and syrup flow. The largest producer I know has about 500 trees on tubing. Im trying to build a network of Missouri producers and hobbyists. Good luck to all of you as the thaw comes north! john
