I’m going to add a small cage fan blower o my ash clean door out on my leader/smoky lake evaporator. I need to add plug to the fan should I wire in a speed control switch or just run it full speed when in use

Remember every time you fire the arch you will need to shut down the air flow. You need to make it as quickly as possible. You also need the ability to change the amount of air depending on your desired heat needs. You also will have fluctuations in your wood and that will require more or less air.
Will the fan you have allow for a rheostat. The faster you can shut the blow air off the quicker you can open the doors and get wood in and be back at full boil.
You want a on off switch up out of the way for normal operation and then a way to adjust. I would opt for a blast gate between the fan and arch with a simple lever to open and close the air duct. In a second you can go from full blast to shut down.

I have installed these on a few forges that I helped put together. I was watching a horse shoe competition and when the guys walked away from the fordge they would slap the blact gate shut and when the shoved the iro in the fire they would slap the gate open and all hell broke loose and the fire was up to 100% The idea is to keep the sap boiling so every second counts when firing with wood.]
