Learning as I go, I asked some questions on another thread but dont want to hijack it.
I am going to build a steam hood, buddy of mine has a sheet of 20 or 22 gauge aluminun but its painted on both sides. Is it ok to use it or pass and get a sheet of un-painted?

Thanks,
David

I would go with unpainted. You don't want anything to run back down into your syrup pans and contaminate the syrup.

If you plan on building your reputation as a fine syrup maker don't start out with inferior materials. A sheet of 20 gauge Aluminum is cheap and its new and shinny. I have one that is Aluminum and its like a funny car body light and easy to remove.

I second that. Painted is not approved, and secondly you don't even know if it is a paint that used to be an approved type. At any rate, none are now.
Keep your product top notch.
