My new evaporator has a Firebox that is 24" x 24". What is the distance I should have from the top of the grates to the bottom of the pan?

My homemade 55 gallon wood burning Arch is 16" from grates to bottom of ss pan.
Works great, just evaporated 22 Gallons in 4 hrs.

Here's one of boil rate from above.
I have no flues, no ramp in firebox, no auf.
Know I could probably double boil rate but what I have works for me and my number of tap(30)soon to add 25 tomorrow.
