How much counter space do you have in your sugar house?

I'm putting up a 16x20 next week and going to order some SS tables for filtering/bottling/cleanup? tenatively planning on ordering 2 - 60"x24" SS tables that have a 44x18" shelf underneath and a triple bay SS sink. Does that seem like a decent amount of work area? i run about 200 taps, usually bottling 3-6 gallons at a time. I would like to try to get into making maple sugar this year if possible as well.

Im in a 10×32sugar bush. kitcken aria is 10×16 . I have a stove ss3 basin sink and plenty of counter space for botteling and candying . I even have a murfy style table and bench to play cards at while passing time in the shack. Lol
A friend of mine may have good used ss sink and tables he runs Remandco refridgeration they remanufacture comerical kitchen and refridgeration equipment.
