I have about 20 trees that I tap and boil on two 210,000 btu turkey fryers. If I were to boil down as much as I could in a given day (unfortunetly I have to go to work) could I put the semi concentrated sap in a cooler and boil it the next night? Would it spoil? Thanks everyone.

Just keep the sweet in the pots, it won't spoil overnight. Plus you'll still get a little evaporation as it cools.

I did the same thing when I used boil in batches on a gas grille. I always had enough sap to boil every day so it didn't have a chance to sit long enough to spoil. I just left it in the pan and added more to it the next time I boiled.

Or you can collect the semiconcentrate for several days worth of boils and then boil all the semiconcentrate down at the end of the week for a better quality product.
