help Volcano turbo 2000

I just bought a volcano 2000 turbo off a former maple producer. No book/owners manual schematics or anything came with it. Is there anyone on maple trader that can help me out? I figured out piping of it to a degree but am lost on a couple things. Also where it is a new evaporator the technology is different. Any help would be appreciated. Pics of your set up would also help. On mu steam hood pre-heater There is two pipes capped off, they are the middle two pipes what are they used for. Any help appreciated. I am not sure what you have but some pre-heaters have caps to make it easier to clean. Also some pre-heaters are dual purpose. One to heat sap and one to heat permeate for hot rinsing membranes.
