I am going to buy sap this year from someone and was wondering if there is a sap chart I could use based on the sugar content of the sap?
Cornell has a chart you can download. You put in the percentage you plan to pay and the rest will be done for you.

Around here it is about a 50/50 split. Where there is a lot of demand, the seller often gets more. Are they delivering or do you have to pick up?

The norm in my area is 65%.

They are bringing the sap to me. All the syrup made from this sap will go in a barrel and be sold in bulk, I think 50/50 is a little high. I think it all depends on what the bulk prices are next year. We all know the bulk prices have gone down every year,and most likely go down next year too.I was thinking a third would be fair. I don't know,when I was logging thats what the landowners got for the wood. Just dont want to short someone but I don't want to over pay either.

Honestly, from a business perspective try and get what is best for you. If you think 1/3 is fair start there. I can't see where getting 60% or better is sustainable at these syrup prices.
