Can any one tell me if there is a different taste in the finished syrup between using only sap from a Sugar maple vs a mixed batch of sap say like a mix of Silver Maple and Sugar Maple? I'm in a place right now that has more Silvers than Sugar. Also, can you use the sap from a Norway Maple to make syrup? Thanks

Silvers and sugars make a fantastic blend, as do blends with Red maples. I can't speak for Norways. However I've heard the sap from norways has a whitish color to it.

I've made syrup from Norway maples.
Haven't been able to see much difference from Sugar Maple sap.
Though Norway maples tend to have a lower sugar content.

I tap all kinds of maples and I think it tastes great. the sap from norways is crystal clear during the sap flow. the sap content is around 2.5 from norways.
