I had a coworker buy some syrup from me. he liked it just fine... said it taste just fine. however he was boiling it down to make sugar on snow and said once it was boiled beyond syrup constancy it gained a very slightly off flavor. he used to make syrup and is knowledgeable about the processes. he thought perhaps he burnt some of it, so he dumped it out and tried again... tasting it before he boiled. Once boiled/thickened it had the same flavor as before. he described it as mapley but not as sweet and a tiny hint of a different flavor. I tried the syrup... no off flavor at all to it. what could have went wrong? could it be that neither one of us can taste a slight off flavor and cooking it further just concentrated the flavor? I'm kind of loss of what went wrong and want to find out to avoid such things in the future! anyone have any suggestions? I offered to replace the syrup, but he said he wanted to keep the syrup because it taste good to him as is.
