Birch Season Is Here

Collected seven gallons of birch sap so far. We only have three trees tapped, but we're only hoping to get a few pints of birch syrup.

I wanted to tap a few birch trees at my dad's place but didn't get to it as had other things to do. Might just try it next year though. How did that syrup turn out? What do you figure your ratio was? I have read that it could be 100/1!

I didn't keep very close track of how many gallons I collected, but it was somewhere around 30 and I have more than a quart to bottle tomorrow, so 100/1 is about right this year. A quart will go a long way since I mostly use it for smoking meats. I pulled taps yesterday because I just have too many other things going on.
