How big of a kitchen is needed for in a sugar shack?

It seems like the layout and functionality is more important than actual size to me. We have a 12'x16' area that is not big enough because of door and wall heater locations. I think a room the same size if laid out properly, would be plenty large enough. We're in the process of planning an expansion, or building a new sugarhouse.
