a cleaner that can be found at leader evaporator or bascoms, called pan cleaner
You don't want to use pan cleaner on anything other than evaporator pans. Cleaning tanks and lines in the sugar house I use chlorine and water mix. You can use white vinegar to clean your pans if you don't want to use pan cleaner. It does a good job, that is what I am now using.

What concentration of vinegar do you use? Is it undiluted table vinegar (5% acetic acid), cleaning vinegar (10% acetic acid)or do you use glacial acetic acid to make a specific Concentration? Trying to guess how much I will need to buy!
Thanks
