It's probably been answered many times but I am new to this addiction so bare with me. I am getting my syrup close in the big pan then draw it off through my cone filters(1 final and 2-3 pre filters). Then finish it and filter it again through a new final filter and 2 pre filters. I let it stand over night and there is still a milky sediment on the bottom! I am always filtering hot. is this a nitre, or a concentration of sugar? There isn't a taste problem just a visual cause I use glass bottles. What am I going wrong? Any help is appreciated,Thanks

It's niter. Is the filter new? How do you go about cleaning the filter between runs?

finish filters are new. I use sink sprayer with hot water only and then squeeze out excess water and hang them to dry. I don't twist them cause that can ruin the fibers. Could it possibly be I am getting my finished syrup to hot? boiling point is 209-210 so I am finishing to 217-218. I am using a digital thermometer.

Can't really be too hot. Wondering if you just got a bad batch of filters. Cone filters won't get all niter out, but the next morning seems quick to have noticeable niter on the bottom of the glass.

Even filtering my last 2 batches twice; first time thought pre filters only, then back on my water jacketed setup to 185, through the pre-filters/cone filter, back in the water jacketed setup to 185 again, then bottled, they show some signs of sediment. I purposely did not reheat above 185 after the initial filtering to minimize the risk of creating additional niter. The initial filtering removed nearly all the sediment from the evaporator, and made the final filtering go quickly. But I have to say I'm about done with these filters, and see a filter press in my future. I bottle in glass.

Thanks guys for the info. I do have three finish cone filters and this new one seemed lighter/thinner, but the frustration sets in and you say this is the last time I do this and come next spring you can't wait to do it all over again.

Hey Old Turk!
Some niter is getting through, so maybe go with 4 pre filters and remove the inner-most one part way through the process (and possibly another one)? Some people don't remove them; they fold the halves together to close it and pour syrup in the neighboring open filter.

Thanks daveg, you read my mind, that's what I am going to do.
