When bottling in glass containers, like the maple leafs, do you still bring the syrup up to 185 or so degrees? Or can you heat the syrup up enough to have it flow better?

You still need to hot pack it. With the small glass leafs I maintain 190 because the bottles are so small and the syrup temp drops fast when it goes into the small bottle. Some people warm their bottles when doing the real small one so that the temp does not drop too much. That way you still get everything sterilized.
You do not want to get it any hotter than 190 or so because it will release more nitre and the syrup will be a little cloudy.
