First off, I tap about 70 trees. Producing only 10 -15 gallons for family and friends.

I currently use a 40 X 40 firebox that is raised on 4" blocks so it can draw air in with a 36 X 36 flat pan on top of it which is closed in on 3 sides. I leave an 1" crack in the back so it can get the smoke out and also so it can draw. I boil off 10 + GPH. It's been working. Should I add a stove pipe? What size and why?

Aside from getting the smoke up and out of your eyes... The biggest change you will see is more draw.. The stack will create a vacuum, drawing more air into your fire... (hotter/ faster / and probably more efficient, cleaner burning)

I'd only be guessing on the ideal size.... Hopefully someone else on here with a similar unit can help out....
I fashioned my arch after one of the commercially available 2'x6' units and they use a 10" stack.... but its designed to pull all that heat through drop flues... with a flat pan setup like yours, I don't think you'd want to draw that much, or you'll lose a lot straight to the chimney.. Might need to work on a baffle as well, to force the heat to travel close to the pan from front to back.
Could likely go with the 8" and choke it back with a pipe damper...
