A good thread while waiting for more sap. Share your favorite drinks while evaporating. I like to drink what we call a Sapskey.
-ice
-shot or so of favorite whiskey/bourbon
-sap
-maybe a splash of the sweet stuff from the pan

i tend to stick to light beer when friends and family are over. most the time it's my wife and I... she's a twisted tea fan... I prefer a good IPA. however my old man brought over some crown last week... that goes great with a splash of almost syrup!

While I'm not a tea totaler by any means and I sometimes order a beer when out to dinner, all I drink when boiling is ice water

Kona coffee or water when doing the dangerous/critical stuff like boiling, splitting wood, final finishing. Maple Porter when doing all the other stuff like collecting sap/bottling/cleaning equipment. A slug of any decent whiskey only as needed here and there to dull the aches - world's best medicine.
It is pretty funny, I have had people stop by to "help" with the boiling on a Saturday or whatever. Drink all day and by 7:00pm they are falling asleep in a chair by the fire pit while I am working well into one in a series of 16 hour days. One of the reasons I prefer to just do this project alone and decline offers of help.
Coffee made with sap rather than water, I like to have a few adult beverages in the sugar shack but don't while cooking anymore after I scorched the pan once and that happened sober to many things to watch to not be my sharpest

I'll have a beer once in awhile, but I got to say my favorite beverage is ice cold Mtn Dew, has to be a 12oz can too, don't like the big cans and won't even consider it in a plastic bottle.I know I'm strange. Otherwise water.

I usually save the high test for the end of day in front the of the wood stove in the house. But I've been know to have "soda" in the shack. Sometimes some homemade wine. But the most common "drink" is the constant syrup pan sample I ladle into a very small SS cup. I guess I'm obsessed with checking the product. I use syrup every day, but nowhere near as much as the tasting during boiling. It's one of my most favorite parts of the job. I should be 100lbs overweight, but that's not the case.

Bigelow Mint Medley tea made with piping hot sweet from the flue pan. If it's late in the day maybe beef it up with a shot of rum or whiskey - Crown Royal Northern Harvest Rye.

I drink coffee, permeate, or light beer sometimes toward the end of a boil. But, after a beer it affects how the syrup tastes to me. It's not as good. I will have to try the whiskey with syrup sometime.

Depends on what time of the day it is, and where I am at in the boil. If I'm finishing concentrate - no booze. Otherwise, I like nice cold clear sap, coffee with a little Irish Cream, some energy drink we make with the soda stream, or a good IPA (Fargo Woodchipper is my favorite lately) In the evening if I have company, it Buffalo Trace Bourbon on the rocks.

Funny how a couple guys like IPAs...maybe cause a really strong one - Mad Tom IPA - made me swear off of them. It was like sucking on a lemon and a pine tree at the same time! But if there's a Beau's Lugtread Lagered Ale kickin around, I won't say no.

Grain belt Nordeast in 16 oz. cans. Unless it's batch pulling time then it's coffee. Start of a new batch, just add sap, wood, and alcohol.

Usually near the end of a boil we will get into the vodka and whatever we have for a mixer. Syrup works great, but if you don't drink it fast, the syrup will get too thick with the ice and not mix. :( Of course drinking it too fast is not a good thing either.

Clean permeate or monster energy if it's an all nighter. I do most of the sap hauling and also have a Comercial drivers license. When the seasons over we get into the bud lights.

I seem to remember some old-timer who banned alcohol, a book, and a fiddle from the sugarhouse as being too distracting, leading to burnt pans. I drink an awful lot of water when I'm firing for six hours straight, and someone will bring me a beer when I'm cleaning up.

Depends on the day, time of day and who is around. Coffee with syrup and genny bock would be the most common outside of water.

It is a very bad idea to drink alcohol while making syrup. Making good syrup requires a lot of concentration and precision. Not to mention the safety aspect of staying alert while dealing with extreme temperatures and fire.

Half a cup of good strong coffee with half a cup of sweet off the back (sap) pan. 3-4 of those, between the caffeine and sugar, you're vibrating in place.
After everything is cleaned up for the night, perhaps a hard cider or two on the rare occasion.
Once the season is done....gin. Either in the form of Gin & Tonic or Tom Collins. Preferably while sitting on the beach with a book.

Founders All Day IPA. Still get a nice bitter hop kick but low ABV so I can still stay awake and on top of things.... somewhat

Since I boil solo I like to stay a awake.... 2 liter bottle of Coke is always handy, occaional sap tea from middle channel and plenty of water. If friends stop by the beer may come out, but I sip cause a burnt pan makes a bad impression.

I learned a lot when I was stationed in Germany 84-86. 1 Liter mugs of German beer tasted real good. 20 years old and a couple Liters of German beer, all the ladies were beautiful. :lol: And yes, we drank it warm if we had it in the barracks.
