View Full Version : Slight hint of clove?

A few weeks ago I boiled down a batch that yielded me 3 quarts. This morning I opened one of them for breakfast and noticed that it had an ever so slight taste of clove. Fortunately I don't mind the taste of clove, but nevertheless I've never had this happen and I was wondering if *anybody has had this happen?*
It's only 3 quarts and I will just use it for cooking sausages and ham, so it sure won't go to waste.

Hi John. I remember this subject being touched upon in the past. Here's a link to the "Flavour Wheel for Maple Products" put out by the Canadian Government. Do you think we take our syrup just a little too seriously up here? :lol:

You'd have to take that up with Mother Nature. I had a batch that tasted of strong cinnamon once. It was unique and very delicious. Other times I've tasted flavours like molasses, butter, caramel, brown sugar and sponge toffee. It's all part of the fun - as if we need any more excuses to enjoy sugaring.

My early batch of syrup this year from Red Maples has a distinct flavor of almonds and vanilla.

Delicious!

I just cooked down the second small batch from the only sapline I have that contains freemans and a silver. The first batch tasted very good but unusual. The second batch tastes very good but distinctly like buttered popcorn.
