Hello everyone, after I fill my quart decanter jars on the very top of syrup forms a darker layer of syrup. It's a very thin layer but I can notice it. What would be causing this? Thanks, Jon

Do you use some kind of defoamer?

Yes I use Lapierre liquid defoamer

A few years ago we used to much defoamer and I could see it floating on top of our syrup in the quart decanters.

Is it just "skinned over", in other words to top layer exposed to the air looks like a film, or is it wider, like a different density layer?. If the latter, my guess is that the syrup cooled some and formed a gradient and the layers you see have different amounts of sugar. You need to bottle as hot and as fast as possible. If the former, try immediately tipping your jars after filling so different parts of the syrup are exposed to any air in your decanters.
