I boil on a 40X40 firebox with a 36X36 flat pan. I know there are a lot of variables but I'm wondering approximately what the evaporation rate would be. I just keep adding and adding to it until I run out of sap.. This weekend looks to be a long one with over 350 gallons to cook down.
Your opinions please.

You're right there are a lot of factors. But I cooked for a few years on a similar setup with a 24x48" pan. Almost the same boiling surface area. If my setup was similar, you're in for a long weekend...I boiled about 10gph. Keep your fire hot and good luck!

If it's functioning properly, you should be able to achieve 1gph/sqft, so you'd be at 9gph. 350 gallons of sap will takea little less than 39 hours at that rate.

The sap ran GREAT from Saturday afternoon until Tuesday night. Brought in about 4 gallons per tap in that time period. I'm very very happy with how much sap I've collected so far this season. Hopefully we get some more great runs in the coming weeks.
