View Full Version : Fume hood cleaning?

My name is Nick and I tapped a dozen trees down in Needham, MA on the college campus where I work (Olin College). Great first season for us! A quick question - our kitchen is letting us cook down on their commercial gas ranges and we're using the fume hood over top to vent steam as we cook down 20-30 gallons at a time on two steam kettles. Do you think we should we be worried about any kind of sugar buildup in the fume hood? Thanks in advance for the help :-)

Nope. Just distilled water going up. Only thing I would worry about would be condensation dripping back down into your pots.

I think the big concern was whether sugar might go up with the water and gum things up like grease and salt when they get up in the hood

It smells sweet, but there's no sugar.
