So I tapped at my usual time, made 2/10 of the syrup I usually make because of the warm temps. Now I taste a hit of buddy flavor in the syrup. However the forecast finally is perfect for sugaring over the next 2 weeks.

Question. Is it ever possible for a tree to go back into dormant phase with return of cooler temps and thus the buddy flavor go away for a bit?

I'm trying to decide if I need to just pull the plug of keep testing sap as it comes in.

I have very low sugar content so I don't want to cook buddy sap.

I would give it a few days until I threw in the towel. I don't know when your trees typically bud down there or if it even makes a difference but it's pretty early yet and the weather seems to be becoming more seasonable. I have heard mention of sap quality improving on occasion. A rise in sugar content may make a difference. There's no guarantees. It would be nice to hear if it does improve for you. It would be good information for all of us.
