View Full Version : Hard Maple Sugar

Does anyone make hard maple sugar? (the kind that you'd pour into a block of sugar and at a later date you can shave off what you need with a knife)

What do you use for a mould? I haven't found one in any of the catalogues I have.

We make our own molds out of stainless steel 26 guage 2.5"wide x 4' long and 1.25 deep. We cut steel 6.5 x 4 and bend the 4 wide side at 1,25 " at 90 degrees on each side, then we cut strips of ss 1.25 x 12.5 long to close off the open side of 3 molds and put them in a wooden craddle that holds it all together

This is what they use around here... they're called tins, but of course they're SS nowadays. Nobody makes hard sugar here, this is maple cream (soft maple sugar or fondant). The tins are U-shaped with open ends and the row dividers are flat. I think these ones came from Waterloo about 10 yrs ago, but I will ask Dad if they are still available from Lapierre.

What Hanging around has there is exactly what I was talking about, We made them for pennies on the dollar verses what you can buy them for from a maple company

Yup, shouldn't be hard too make if you have a brake and some good way of cutting SS.

I will bet there is someone close by up there in Ontario that has one, there has to be someone that builds duct work or something. Take this picture to a tin knocker and you will find these made cheaper than the maple equipment people
