How tall to make roof?

I'm looking into buying a new evaporator for the 2018 season which means the saphouse needs an upgrade, how tall would I need to build my ceiling to fit a 3x10 leader with a steamaway and all the hoods? The steamaway is a long while down the road but I'd like to build the saphouse to fit it before I need too. Thanks in advance

10' minimum, 12' better. At 10' the hood may need to be built low profile to allow it to be raised when needed.

Another thing to remember if a steamaway is in your future plans is that steamaways are hung from above,flue pans are not designed to take the weight. A system of pulleys and hand winches are used to take the weight and to remove for cleaning.Get in touch w/Leader and they will tell you the weight of a full steamaway with hood and stacks.

Just remember it is always cheaper to build up than it is out. With that being said the extra height can be used for storage (there is no such thing as too much storage area). I went 14 with mine to add room above the utility, canning and RO room.

I would agree with 10 foot minimum ceiling height. 11 -12 better.
