During my test run yesterday I found out that the thermometer I bought is a piece of junk so I'm wondering what you guys use to gauge the final 7 degrees. I wanted to get one that had an alarm at preset temps. How are you holding it in the pan?

Big difference in temp indicators! Get something in tenths of a degree. Make a stainless bracket to hook over the edge of the pan and support the thermometer. the candy ones are about $30 swivel head long stem.
Then test (calibrate) it in boiling water.

I use the ChefAlarm from ThermoWorks because I also use it when smoking or roasting meat.

Same here, except I use it for finishing. I got it with the long probe, which works great. The pan came with a dial thermometer which I have found to be accurate and reliable.
