View Full Version : Green Taste in the SAP

I have 1 "Crimson Maple" which is a large healthy tree. I decided to tap it this year (all the rest are sugar maples). The sap from the crimson maple has a green buddy taste, if you know what I mean. I won't use this sap because I think it will give off an unpleasant taste to the boil.

I know this tree is not a sugar maple.
Is it a Norway Maple with the crimson grafted in?

Has anyone had sweet syrup run from a crimson maple?

Just interested is all.

Hi Jim. A Crimson Maple is a Norway Maple - just a red variety. I think I know what you mean about the taste of the Norway sap. It's almost a bit "grassy". I use my Norway's sap and it cooks up beautifully. If you are at all concerned that your sap won't taste right, boil a bit in a small saucepan and taste the syrup that you make. I'm betting that you will find it very tasty.

I agree try cooking a bit up before you dump the sap. Might boil brown fine.
