Cross flow pan

Is there any reason I shouldnt use an 18" crossflow pan as an only pan? I was given an old stove to convert into an evaporator and it is 19" wide. One of those pans would fit great.

There is no reason you couldn't use it. Put it on the stove and get cooking!

Probably the whole thing will try to make syrup. So just be prepared for that. Sap in it. Fire under it , you should be making syrup in short order!
