I tasted some sap today and it seems like it's already turning woody. Still sweet, about 2 1/2%. Should I boil it or are we done?

mine didn`t seem bad yet, hopefully the good hard freeze coming up will help keep the season on track...

I made some (woody) Metabolic syrup one year! It was not fine! Some of best looking, worst flavored syrup I ever made! If the flavor is good enough for your pancakes then we keep going.

I have some trees in Colrain that have been doing great so far. Hopefully this cold spell will shock them back into submission. I did notice some bud swell on a soft maple in my back yard though. Still, I don't believe it won't go on for a while yet. My syrup hasn't begun to go dark yet.

mine were MAYBE a little wood scented yesterday evening when i consolidated the buckets and put some sap-ice-cubes in them to keep for the weekend, but still tasted sweet, so I'm assuming it'll be fine.
As has been said, hoping the deep freeze this weekend breathes some new life into the trees and we get another really good run or two over the next couple weeks!

That's interesting, I'm way south of you guys, and only started tapping a week ago. And my trees are still a looong way from budding. Must be micro climates LOL.
