This is my 2nd year with this hand pump filter press, but I am having that beginning of season forgetting a basic thing moment...

I went to filter my first batch of the season, approximately 2-3 gallons of syrup. My press has 3 cake plates. Not sure how much DE each holds, but I thought I was supposed to use 4 cups. So I mixed the 4 cups into the syrup and gave it a good stir. It has just dropped off the boil, so I figured I was good to go. I put the filter output into the same finishing pan I was drawing from, and pumped for 10 minutes or so. The syrup still looked extremely cloudy and its texture was gritty.

So I emptied the filter. That's when I noticed I had not put a filter paper at the very end of the press (between the last cake plate and the outer waffle plate). All other filter papers we correctly placed.

While taking it apart I found that none of the filter papers had any DE on them, and none of the cake plates had any DE either. So basically all the DE seemed to pass right through the entire press??

Any thoughts?

Be sure all the plates are on in the proper direction. Also I'm guessing if you were missing a filter, the sap would take the easiest path through the unrestricted channel.

I did not check that, thanks.

Well, it was at the end of the filter press, so I'm guessing it went through the 5 papers ahead of the missing paper?

Syrup does not go through multiple papers. If 1 paper is missing all syrup will go through that vacant spot

I looked at my newly configured clean press and found that some plates were in the wrong direction, so that was probably true of the first attempt...a basic "doh!"
