Syrup made from Red Maple trees

Made this yesterday.

My first syrup on my new evaporator.

I'm tapping almost all Red Maples this year.

Syrup seems to have a red hue to it.

Tastes wonderful! :D

Very nice! I tap mostly reds too and agree on the wonderful taste.

I too like the flavor of red maple syrup. I generally boil deep and long and love the stronger/robust flavor it produces.

While my trees are mostly sugar maples, I have 40-41 red maples in the mix around my sugarhouse out of 175. Even at that, I think it adds a flavor advantage. If I finish the sap from there separate from my bigger woods I can taste it.
