why is one batch darker than the other?
Jar on the left done yesterday
Jar on right done a week ago
I did have 5 more taps but same amount of sap 50 gallons
Batch yesterday was finished 1 degree higher at 2201573115731

Welcome to the world of making maple syrup. I sure hope you didnt think you could control the color?:)
Actually you do have some control over the color.
1.Keep all the equipment sparkling clean.
2.Gather sap each time it runs and boil it all the same day.
3.Boil it as quickly as possible to minimize the carmalization effect.
At that point you have done just about every thing in your control to make the syrup as light as possible.
If you are doing all of those and its still coming out darker then it mother nature letting you know she is still in control!
By the way you can do the opposite of those three things and make darker syrup!

2015 we made dark syrup at the start of the season and made light syrup at the end of the 6 week season.

Syrup color changes over time. Sometimes it gets lighter in the middle of the season, but usually it gets darker. But a lot of people like the "richer" taste of darker syrup.

Ended my rookie season yesterday.
Did my 5th boil in 6 weeks
60 taps gave me 364 gallons of sap, using sugar, hard and soft maples.
I used turkey fryers and a stainless steel pan.
Ended up with 73 pints of syrup.
Had a lot of fun, learned a bunch and bought more taps for next year.
Oh, since I don't have access to a sugarbush, I bought 200 sugar maples and will plant my own for future generations!
