How often to clean a 2' osd syrup pan on a 2x8 evaporator?

As often as necessary (I know, not the answer you wanted).

It depends widely, based on how much niter and sugar sand each batch produces. Also, whether you are cooking raw sap or concentrate will make a huge difference. I know guys that cook concentrate on small rigs like that and they will clean their syrup pan before each use. I generally made about 50-60 gallons on my 2x10 before I cleaned the pan. I was cooking raw sap and generally reversing the flow each boil.
