View Full Version : Finishing Syrup Question

Running a 2 X 3 Mason. We draw off at around 216 degrees through filters to a finishing pan that we set on a propane burner to finish. We let it sit overnight then reheat and bottle the next day.

My question is do any of the small producers use the steam from the evaporator to re-heat their syrup before bottling?

My thought is that after my product sits overnight I could set my finishing pan on top of the evaporator pan dividers and use the steam being generated from my next batch of sap to re-heat my finish product. Just not sure the steam gets hot enough to bring the syrup up to 180 degrees?

I have kind of a long and involved filtering process but it works perfectly without spending money on fancy filter systems. I'll try to outline it here;

Bring syrup close to finished in my pan.
Transfer close syrup as it comes to a 9 gallon stock pot (with a spigot) through a simple non-woven paper cone filter.
Finish syrup in stock pot and let it sit over night to settle.
The next day I draw off cold, finished syrup from the spigot being careful not to let any of the sediment get out.
Reheat finished syrup in a double-boiler.
Pour 185 degree syrup into my custom double-boiler box filter through a paper pre-filter and felt filter.
Bottle.

Not to brag but I pack all my syrup in glass and it has zero sediment with this process.

So glad!! The reheating is tricky as you don't want to get it too hot too fast lest you'll start producing niter again. I think the steam will get you started but I doubt it'll get you hot enough fast enough to do what you want. Also keep in mind some of that steam will condense on your cold pot and drip back in the pan. Not ideal.
