Oven cleaner and scrubbing seems to be the standard operating procedure when cleaning soot and carbon off the bottom of pans but I'm wondering if anyone has tried using creosote remover (spray bottle version). I have some thick carbon buildup and oven cleaner is only doing a modest job.

Are you talking about during or after the season? During the season I let the fire clean the bottom of the syrup pan, and I brush in the under side of the flues to clean them. Then after the season I take the pans outside (heavy on the 3x5 flues pan, a 4 man job) and pressure wash under the pans, with just water, usually permeate.
