View Full Version : Bottom of pan is bursting and splashing syrup out of pan.

I am trying to finish off some syrup inside on the stove. When the syrup gets close to boil it seems to burst up from the bottom and bangs the entire pan around.
A bit ? Thanks

Not certain why I lost some text. Meant to say can anybody tell me why this happens and can it be avoided?

I'm guessing it's an electric stove?

Sugar sand on the bottom of the pot. Mine has always done that too.

If you use a heavy bottom pan and heat slow it helps stop that.

The syrup wants to jump out of the pan. Impossible to get near it with the hand and thermometer. Sometimes in the past it has not happened. I guess that is when I filtered out sugar sand before reheating.

Is the pan wanting to snap back and forth? I finish on the stove (electric) in a steam pan and if I don't heat it up slowly the pan wants to expand/contract and bounces around quite a bit. Just a thought. Ted

I would say that I get a small explosion in the bottom of the pan and the "almost" syrup shoots upward and sometimes shoots so hi it comes out of the pot. It will burn the hand if it is over the pot because it will hit it. Pot rattles about rather loudly on the burner. Jerks the pot a bit side to side but the momentum is mainly up and down.

I remember my Mother talked about having to filter the syrup sometimes when it got closer to being done to get the sugar sand out of it and then it would finish boiling properly. I never actually watched the pot boil when she was doing this, so I am not sure if it was acting like you describe or not.

I have the same problem with one of my thinner stainless pots which stinks because it's a perfect size for finishing. Like someone else mentioned, using a pan with a thicker bottom and bring it up to temp slow. I keep my stovetop dial between 7-8.
