Would it be alright to let the boil die down then restart the boil
Tomorrow to finish. Or would this alter the taste of the syrup

I think most producers with continuous flow pans leave sap in their pans so yes, it's OK to boil today, leave it in your pan and finish tomorrow. It will not affect the flavor (maybe the color).

I'm unsure of your setup, but as for myself (a small timer) I am only able to boil for a couple hours a day and when I shut down for the night I just put a cover over my pan to keep the critters out, then just fire it up the next day. I've done this for a week or maybe more and I have no issues with taste.
I have a batch going now that I've been adding to for a week and I hope to finish it off tomorrow which will make it an 8 day batch.
