So I took my flat pan from last year and added a couple of dividers so I could do a continuous boil. The bottom of the pan was not the flattest and I tried my best to get it flat but it still has a few dips and bumps. Will that affect the flow of my syrup to the point that it will not flow correctly?

You will have some mixing, but should still establish a gradient.
