How long will the sweet in the pans last in between boils when temps are 50-60?

I was just wondering the same thing. I'm new to a continuous pan, and going to boil todays run tomorrow, but after that it looks like a long stretch until the next run

It depends on how long I will be between boils and how warm it will be. If I'm going to be longer than three days, I'll drain the sweet into five gallon buckets and place them in a snowbank or refrigerator. I've also had a time where I didn't get back for four days and it was still OK but I wouldn't go any longer than that.
