What fitting not to use?

I'm doing some upgrading this year from the old dump and pour method to rigging up my boiling and finishing system with valve fittings and wondering if there are any valves and fitting to stay away from? Does a guy need to go with stainless everything or are brass valves and other readily accessible fittings at the local hardware store ok to use?

If you plan on meeting the standards to sell to bulk packers or plan on ever having your sugarhouse inspected it is best to spend the extra money the first time and go with stainless. I just bought a half inch stainless bii valve with a small 90 degree spigot from leader evaporator for only 30$ for my new canner.
