Hybrid pan bubbling over

Ok I AM GETTING DISCOURAGED!!! I can't even turn my Auf blower on without my front pans boiling into each other. Hydrometer still reading at 50. Ugh. About ready to give up this year. I have no idea what it going wrong.

Are you using defoamer? If you are then a couple more drops per firing will help.
2 years ago I had trouble with really bad foam no matter how much defoamer I used. It lasted a week then settled down. Don't know what caused it.

I asked another sugar maker about a similar problem and his response was to use more defoamer. I know you don't want to overdo it, but you need to use enough defoamer to keep the foam under control.

Of course if you asked my mother the same question, he answer would be simple. If your pan foams over when you use the blower, then don't use the blower...
