Two of my jars from last year have this in them. When turned upside down the mass seems to want to hold together. I'm inclined to toss them out. It makes me think of a "mother" in vinegar production. Anyone know what it is?

Niter (sugar sand) most likely, if it is a fine silt after you let it set a few days. Don't throw it out. If it bothers you, just add it back into a batch this year and filter it better. If it is more of a mold type glob I'd throw it out. Either you were not hot enough when bottled or the cap seal was compromised. Even with this, most people (but not all) can simply bring it back up to at least 190, then skim it and repack in a cleaned bottle. If you do that, use it for home use.
